Wayne B. Yeager's "Techniques of the Professional Pickpocket" is probably the best I've read, if only because its appeal to magicians appears to be something of an afterthought.

The Art of Pickpocketing - James Coats and Nick Byrd is good for a overview and they have some great live performances.
If you want watch stealing then try Chappy Brazils - The Watch Steal Video, this one may be harder to obtain.

Which Greg Wilson is it?
I think its On the Spot but I cannot find it right now. But I had forgotten about him. He is lecturing at Devon Magic Circle next month.

Oh, and if you're interested in watch stealing - and frankly, this is a small "bit" we could all put to practical use regardless of our respective areas - the late Chappy Brazil's Watch Steal Video is a real treat. It's corny as anything, but there's two things I adore about it - first, it's very, very thorough. You see everything from a number of angles, there's advice on handling, how to practice, everything. Secondly, it's one of the only genuinely funny magic tapes I've seen - it's a very corny, dated piece, but they seem to be aware of that and ham it up a little. Chappy was obviously very funny, and it's obvious that his best years were in front of him (for those who don't know, he died a couple of weeks after the tape was made).

The best book on the subject is probably the one by Ricky Dunn.

James Freedman, The Man Of Steal, has some great books and DVDs out on pick-pocketing. As good as Ricky Dunns.

This is absolutely right Chris, Wilson does cover some pick pocketing on his On the Spot DVD.
