Anyway, turns out Frank Oz made a documentary about it (he was the Director of the live show). Hulu in America have bought the rights to it but I've not heard of anybody picking it up in the UK.

The New York Documentary Festival have got it available for one week but you need to be in the US (or need a VPN to disguise yourself as being in the USA) to watch it!
