Dave, I know EXACTLY how you feel about the Jeopardy shuffling problem. I find the problem occurs when a person does a shuffle and bridge while not really paying attention. If they aren't watching, they can flip the packets without even noticing.
I haven't figured a good way around that part, yet. With the flipping, I have them cut off a portion, slide it towards me, and then turn it over. I do the actions right next to them, making sure they follow my lead.
