like a couple of people have said, the more to preform to complete strangers to less you will notice your nervousness... you will always become nervous no matter who you preform magic for but after a while you will notice(or at least i did) that your nervousness is transformed into an adrenaline rush

It's all mental to me, the only person who watches my hands like a dog is my Dad, he doesnt buy ANY misdirection, infact, he stares at my hands and tells me "dont try to misdirect me" when I do.
I dont do magic for my dad anymore.
I think part of it is me being so excited to see their reaction- when I first started magic I practiced on my brother, and he's a bit of a drama queen, his reactions were always great...

Learn The Glide. I doubt your father could see that, no matter how hard he looked at your hands.

my dad is the same way... he even knows some things to look for, but like josh said, i learned the glide and no one ever sees it... hell my dad even knows when i do it some times but he can't see it... its just a matter of knowing your tricks so well that nothing messes you up, not nerves not any thing...

i have a bad habit of trying to find tough spectators and pulling out all my stuff to try and foul them... it gives me a rush when i can do that
