Well, how I handle the situation is different every time. It depends on who I am performing for and what kind people they are.
I might say. "Oh awesome! Another magician in the group. Care to show us something better?"
And hand them the cards, or just the attention for a moment. I say it with real enthusiasm and without sarcasm. I do this because generally people do this because they have a more alpha personality and want a bit of the spotlight. If they know a trick, they do it. (99% of the time, a pretty simple one.) And get their satisifcation. Then I take back over. If not I follow it with "Well, I can!" and do something from my stronger list of effects.
If it is a trick where I know multiple ways of doing it, and I think he doesn't I will switch methods after saying, "Well can you explain it this way..." (I do this with the riffle force all the time.)
If the guy is being belligerent and I can tell he will be a persistant problem... I might just walk away. In party situations it has happened and the group of people got pi**ed at him and followed me. Not always.
Finally, if I am feeling silly I just use a pattern interrupt. When he says that I look at him and say "Ahh!" Then immediately turn to someone earlier who I was speaking with and say "What was it you said earlier?" If done right, it resparks a conversation from earlier and closes his chances of doing anything. If he is persistant at showing everyone, it just kinda makes him look like a jerk for breaking conversation to expose me.
