The better way, is to make up a small wire holder that you can hook over the back of your chair. This could be loaded during the meal by a member of the waiting staff, or by a friend who comes to chat with you at some time.
The holder can be put together very simply using a wire coat hanger. All you do is flatten the hanger, with the hook at the top, then bend the bottom out roughly 90 degrees. This is where you sit the stem of a real long stem rose.
To produce it, you stand, pushing the chair back a little. Then turn to your wife, and borrow her napkin.
At the same time, your other hand makes contact with the rose stem.
Bring the rose up and away from the holder, as you take the napkin up and towards yourself, thus covering the rose. Then remove the napkin, and present the bloom.
