i know its use an ** but im still confused when he cut the fruit and the spectator can freely choose fruit and then signature appear in the fruit

i know another one similar like this one ted lesley version in his version the bill appear in kiwi if im not wrong

they say :

My opinion? Not worth it.

The method being used is clearly visible in the clip (which kind of shows you how good it .......isn't), and that "secret" isn't worth $60 or more.

Better (and cheaper) methods are available (try Doc Eason, James Prince, Martin Sanderson et al) for this. The only advantage here is that it's impromptu and that's not enough to make it a worthwhile purchase.
