This might be off topic, but what tricks from RRTCM do you use? I've developed some pretty good controls with audiences on some of those tricks.
If I have someone acting up on me, i perform "Built for Laughs" at the end of the Glide chapter. It's one of the best purposeful mess-up tricks I've performed.
It gives the little punk a reason to think he's beat the magician, but then you turn it around on him in the most unsuspected way. It really catches them off guard...
If that doesnt help, get everyone in your audience against him. say "Hey, do you guys really want this punk ruining your entertainment?", be really grave when you say it too.
For your problem zac, just ignore the subject, pretend you dont hear that he wants to shuffle. Telling him he cant only aggravates him to bug you more...

moonbeam's answer is very good too, just change the trick right in the middle to a trick that uses key cards, "Gray's Counting Trick" is very short and you can allow the spec to shuffle the deck.

Ok.. heres how I would handle that.. mid shuffle, being asked a stupid quesion like ' Let me shuffle the cards ' .. I will respond.. ' Well, if you shuffle the cards.. then the tricks ruined..' say it sarcastically and they will just look at you blank.. then say ' What.. you thought this was REAL magic?? ' again in a sarcastic voice... then finish the trick.

After that trick.. do what has been said and go into another trick where shuffling does not matter and mid shuffle say ' Oh.. sorry I forgot, you would like to shuffle and see me fail.. well, ok go ahead, knock yourself out' and then finish the trick..

Works for me .. and if it dont... man that bitch is going down... Id smash his face in !!
