I learnt my escapology mostly in fetish clubs, one place where people are happy to tie you up with ropes and chains (they're less happy when you escape, but hey, I like to be challenged!), not necessarily the best route for everyone but it worked for me. I also got friendly with an (off duty) policeman there who introduced me to the workings of handcuffs and standard application techniques, and a friend's Posey straightjacket (with pesky armloops) completed my education.
You can buy loads of gimmicked stuff and basic rope and chain releases, but if you're basically fit and can find someone to tie you up there's no substitute for real practice, save the gimmicks for later as the performance aids they're supposed to be; if you leave yourself reliant on gimmicks you're taking chances if they ever jam or things don't go according to plan.
A good thing to start with is the 100 foot rope escape (aka mummy tie); you'll need a full length of the thickest, best quality rope you can afford or acquire (I got mine for a tenner in the B+Q clearout box, and it doubles as an area marker for street performance), then you just let your audience committee tie you up with it any way they choose. By far the best text I've found on this is in Burling Hulls "33 Rope Ties and Chain Releases". It's only a fiver and a great introduction to the art.
While you're at it, even if you want to avoid the fetish scene it's worth looking up a few bondage safety principles so you don't end up losing a hand; there's plenty on this topic on the web, basically you're best off using nylon rope (not cheap clothesline that'll give you friction burns), if you feel your fingers tingling loosen the tie (safewords!) and NEVER wrap it around your neck under any circumstances (strangulation aside, there's also the matter of the carotid artery which feeds oxygen to the brain, touch that the wrong way and out go the lights).
