Having a script pretty much gives the performer a map, it doesn't mean he HAS to follow it 100%. But it DOES give him/her the chance to change direction and go off the beaten trail a bit better than a guy standing there running off tricks and not knowing what he or she is saying.
It also makes you look like you know what you are doing. Which is usually a good thing when it comes to people wanting to hire you. It shows that you put effort into the show/ act rather than learning a few sleights and then going off the cuff. People like professionalism.
