IF you want to get it under beer mats how about getting there early and setting up a table or two in advance you don't have to do the trick at every table so just do it at these.
A few pointers though.
Arrange the mats yourself on the table (some people do move them so its good to know where YOU put it if they have moved it and found a penny then don't use the trick).

If you are in with one of the lovely waitresses then you could get them on board as an accomplice ( !!though only pay them in kind!! hypnotism is great sometimes) They could put it under for you when they are clearing and re-setting the tables.

and finally always take what i say with a pinch of the white stuff some of my comments are a little out there at times but try to get a point across some how i think?
