Chill Sauce

Postby I.D » Aug 22nd, '07, 15:22

Our local by work, £3.00 for sheesh kebab ( feshly cooked with fresh chicken portions, not this frozen cr*p or not off skewwe ).

beautiful.. topped with mild chilli and mint mayo.

TODAY though, I made a mistake and put the wrong chilli on.. Im still suffering 2 hours later!! I havent sweated so much in years..

I love chilli but there is a line to how much I can take regardless whether I like it or not...

My tongue is fire stick.. I could light flash paper with the bloody thing!! :?

drink milk and be at peace...until you pass the thing again...

in which case, fill a potty up with milk...

Isn't it something to do with the capsaicin(active ingredient in chillis) being soluble in fat?

Here's the science bit I found elsewhere:

Capsaicin is insoluble in cold water, but freely soluble in alcohol and vegetable oils. This is why drinking water after munching an habanero pepper won't stop the burning. A cold beer is the traditional remedy, but the small percentage of alcohol will not wash away much capsaicin. For relief from a chile burn, drink milk. Milk contains casein, a lipophilic (fat-loving) substance that surrounds and washes away the fatty capsaicin molecules in much the same way that soap washes away grease.

I also believe, but I may be wrong, that the traditional Indian remedy for hot curries is to have an ice cream afterwards.

salt seems to work well if you've had something that's too hot. Don't know wjy but it does.

That's very true Mr Wand.

(just had to really resist the obvious, dirty comment  )

Sadly, Milk is not freely available at work :(

Strangely, I can take Habanero sauce and even the chilli straight. and can take a little scotch bonnet in cooking..

but chilli sauce at takeaways messes up my insides if stronger than mild :?

Cineworld nachos with hot cheese and a lashing of jalepenos...

Eyes water, tongue sweats, exhaust system failure next morning.

To quench the immediate pain of chilli burn, can I recommend one of the following:

1. Eat white chocolate (yes, it's nasty, but the Milky Bar Kid's sugar and gloopyness sure do help)

2. Drink FRESH orange juice, not from concentrate

3. Dip your tongue in liquid nitrogen

(OK, so point No.3 is extreme, but not such a bad idea after a meat phall)

lol.. I not bad in THAT area.. but I would just look like I have been 16 rounds with Tyson.. and that I dont like.

Which is why I only stick to the mild stuff, well.. fairly mild, well seasoned... not well spiced
