I always do ambitious card when doing wandering stuff, I just really enjoy the reactions from it. Also, you can do it signed and turn it into almost any one card trick you like (pulling out of pockets, making it jump packets etc). Also, it's the kind of trick that you can stop at any point really, which is handy if you don't know how long you've got with people.
