why is the 3 card monte trick called 3 card monte? what does 'monte' mean?

All I know is that monte is a gambling game that originated in Spain. I also think it was originally done with four cards and you had to find the pair to win.

Outside of that, I don't know. Good question, though.

Demitri is right, Monte is a Spanish card game. It originally used 45 cards known as the Monte, the spanish word for mountain. 3 card Monte was invented from this.
