Righty, I've been seeing this girl for a while, who is a bleedin' vegetarian...

So far I've cooked a couple of meals, including linguine with cherry tomatoes & goat's cheese, and am about to attempt a spicy root and lentil casserole.

She doesn't like mushrooms, and is a "proper" veggie, so no fish.

Any other ideas as to a studenty (aka, very easy and within half an hour ish to cook) veggie meal?

Just take her to McD's! She can have a vegie burger while you gorge out on a Big Mac meal - XL of course.

Does she like quorn? Quorn fillets fried with garlic and onions served with cheese sauce and new potatoes with veg always goes down well. Or pasta with some of those veggie meatballs and cheese on top.

I'm also 'propper' vegie, cheeses and veg are my fave.

perhaps some grilled halloumi dishes. (pasta / roasted veg / etc)

Also try: Polenta. yum.

Nothing wrong with being vegetarian. There's so many meals you can make her - don't be limited by the fact that she doesn't eat meat, fish, or mushrooms

Pizzas are cheap and so quick to cook. Get a pizza base for a quid, heat up some chopped tomatos and garlic for 5 minutes. Put this onto the pizza base and add a topping on top if you want. Grate on some mozzarella and cheddar (I'm lazy so get pre-grated mixed cheese for a quid or so, which lasts a couple of pizzas) and sprinkle some oregano and basil. Total cost will be about £3 and it takes about half an hour in total to prepare and cook in the oven

Get some pasta and mix in some pesto, some leaves and some cherry tomatoes. Top with some of the cheese you have left over from the pizza. Be careful which pesto you buy - not all of them are vegetarian. Doubt the cost of this will be more than a couple of quid and it takes very little time

Baked potatoes cost literally pennies and can be filled with almost anything. It's the ultimate healthy lazy food

Just experiment and see what you can come up with - there's so many things you can cook and make, don't be limited by not being able to eat one thing

Oh, another one. Cheesy garlic bread, especially if it's French bread. It's not a whole meal within itself but it's still amazing

Ooh, a couple of other ideas:

- Macaroni and cheese. I've yet to perfect this but easy enough to make using a powder
- Halfed/diced new potatoes, chopped spring onions and mayonaise. Add other vegetables such as sweetcorn and diced bell pepper to taste


See - there's so so much you can make. Personally I find the fact she doesn't like mushrooms more of a hinderance! That and cheese are my two weak spots when it comes to food

Roast root vegetables are a big hit with my family. Dice them into cubes about one inch square. I use sweet potatoes, parsnips, butternut squash, and carrots. If the kids aren't home, I add beatroots (delicious). Drizzle with olive oil and bake in a hot oven for an hour.

You can toss on some roughly sliced onions and peppers and these will be delicious.

Although I am not a vegetarian, I love vegetarian food.

Peppers stuffed with a mix of rice, onions, etc, and topped with cheese are delicious. Bake for forty minutes or so. A vegetable stir-fry is hard to beat.

One thing that is delicious is to mix mashed potatoes with mushy peas, and a liberal sprinkling of mint. Outstanding. And looks great.

A baked potato with a filling of chilli beans and cheese would work. Or a vegetable quiche. Or chop vegetables (broccoli, cauliflower, carrot sticks, pepper chunks, etc) and dip in batter and fry. Mouth watering.

I don't care if your a strict vegetarian or a die hard meat eater you can't beat a good fondue.

Also, and I know the meat eaters will roll their eyes at this, there are some surprisingly tasty and filling salads, a personal favorite of mine is lettuce, rocket, almonds, crumbled goats cheese, sliced bell pepper, sliced apple, walnuts and grapes with a drizzle of lemon.

As Tony said stuffed pepper is always good, and fry up most root vegetables together and it'll work, with rice.

Quiche is an obvious one.

Also this may just be a personal opinion but tofu is utter *rse, it's just a big chewy nothing, it's a poor mans cheese.

Also (and don't have this with any of the other stuff mentioned) my friend who is a full on carnivore says that Tivell veggie meats are better than most genuine options. In fact I don't think he's brought home a real burger in years.

Oh and also rabbit, rabbits are vegetarian after all.

Other than that theres pizza, pasta, most Indian foods, jacket potatoes, various vegetable pies, and all manner of rastafarian dishes. It's really not that hard.

Bloody meat eaters, you wouldn't recognize a vegetable unless it was slapped on a burger.

Invoke not reason. In the end it is too small a deity.

just do not tell her that quorn is made from mushrooms!

Serve her up a huge great big rack of ribs. If she truly loves you she'll understand. If not, she leaves and you get the ribs.

No matter how much I loved someone, I would leave them if they did this to me. It would show they had no respect for me.

I would advise against it if you want to hang onto her!!!
