I don't care if your a strict vegetarian or a die hard meat eater you can't beat a good fondue.
Also, and I know the meat eaters will roll their eyes at this, there are some surprisingly tasty and filling salads, a personal favorite of mine is lettuce, rocket, almonds, crumbled goats cheese, sliced bell pepper, sliced apple, walnuts and grapes with a drizzle of lemon.
As Tony said stuffed pepper is always good, and fry up most root vegetables together and it'll work, with rice.
Quiche is an obvious one.
Also this may just be a personal opinion but tofu is utter *rse, it's just a big chewy nothing, it's a poor mans cheese.
Also (and don't have this with any of the other stuff mentioned) my friend who is a full on carnivore says that Tivell veggie meats are better than most genuine options. In fact I don't think he's brought home a real burger in years.
Oh and also rabbit, rabbits are vegetarian after all.
Other than that theres pizza, pasta, most Indian foods, jacket potatoes, various vegetable pies, and all manner of rastafarian dishes. It's really not that hard.
Bloody meat eaters, you wouldn't recognize a vegetable unless it was slapped on a burger.
